ETRUSCAN WINEMAKING
The Bio Tarazona Miriam Farm
was born in Arezzo, in the heart of Tuscany, at the foot of the Casentino Forests to spread its natural products, among which after 24 years of study stands out the Etruscan wine.
In 2000 the idea was born to create a wine that would faithfully reproduce the method used by the ancient Etruscans. The project began thanks to the help of archaeologists, including Prof. Maurizio Pellegrini, educational director of the Villa Giulia Museum in Rome, geologists, to understand the composition of our soil, agronomists, in order to become organic and natural, paying great attention to the method of permaculture
THE TERRITORY
Our microclimate, the old vines, and the care we had taken in previous years for our soil all helped for a good start. Our grape varieties, which are Sangiovese, Canaiolo, Ciliegiolo, Albana and Trebbiano and Malvasia, were planted by my grandfather about 70 years ago, so not ancient but certainly with rootstocks that no longer exist today. The soil, which is mainly composed of calcareous material called "bisciaio" with only 30-80 cm of earth, is therefore ideal for vines and olive trees, and has undergone a strengthening process to restore the natural balance and to achieve, as a result, a sustainable, balanced, and also aesthetic environment—what we call in short Permaculture.
THE MONDINI METHOD
A lot of time was dedicated to the study and design of the jars in which to let the wine rest and mature.
Once the optimum was reached, studies began for the internal insulation of the jars, composed mainly of wax, resins, and other natural components, which then in 2015 became part of the winemaking system called “Mondini Method”
With the beeswax I produced myself, I had completed the search for the raw materials needed for the new winemaking.
In 2003 I managed to produce the first wine suitable for a modern palate. The acidity was significantly lower than in previous years, the ruby red color was much brighter, the aromas were more intense, the flavor slightly different (due to the release of minerals) and, to my great surprise, the alcohol content was half a degree higher than the wine vinified in the cellar.
In 2009, to my great satisfaction, I had managed to master the new winemaking process.
THE DREAM
On December 4, 2013 UNESCO recognized Qvevri winemaking in Georgia as Intangible Cultural Heritage of Humanity. Our Farm thus obtained the necessary consent and authorizations to produce the first wine made in the ETRUSCAN way.
In 2014, the first sequence of “official” jars had just been buried in the hill of jars,
The DREAM had come true after years of hard work, study, and so much passion and love for one's land.
THE VALUES
Our company philosophy is to produce genuine products that have now disappeared from the market or fallen into disuse but are fundamental for our well-being, following the principles of the era to which we refer and, above all, totally natural. Our brand Rasenna in Tuscany is a reference to our origins, in fact the Etruscans called themselves Rasenna or Rasena or Rasna




Retracing the history of wine means retracing the history of man: knowledge and flavor, culture and cultivation, life and vine not only share the same etymology, but are synonymous with the entire identity of a people. The art of vine cultivation probably arrived in Italy in the second millennium BC, but the Etruscans were the first to grow bush-trained vines as we cultivate them today. They were very fond of wine, a beverage that connects peoples and civilizations more than any other and which, today as then, is considered the cultural vector par excellence.
